It is Thursday night and the ladies are over with my wife for "Art Night". Tonight was one one of the ladies birthday so of course I had to put something together for them. Here is what I did;

First of all I caught about 110 Cobia from my jet ski this year, not a lot of big ones but I did manage several keepers. Here is one.



I did of course vacuum pack and freeze some, I thawed some out today and picked up some cracked pepper, bacon and Triscuits on the way home.



Cook up the bacon, do not over cook or you will not be able to bend it.



Pour some bacon juice and pepper in a bowl. Pepper and lightly grease up the Cobia chunks.



Grill up the Cobia medium, so as not to dry it out.



Wrap the bacon around the pieces of Cobia and put on top of Triscuits. Serve up your "Cracked Pepper Cobia"



If your guest like it they will share the birthday cake. I got cake!
